Bandar Lampung, May 8, 2026 — Students of the Food Technology Study Program at Institut Teknologi Sumatera (ITERA), together with students from King Mongkut’s Institute of Technology Ladkrabang (KMITL), Thailand, conducted an industrial visit to the tofu processing industry of Pak Tikno on Friday, May 8, 2026. This activity aims to broaden students’ insight into the process of traditional food production based on soybeans as well as the sustainable utilization of production waste.

The visit was accompanied by lecturers of the Food Technology Study Program at ITERA, namely Amalia Wahyuningtyas, S.Si., M.Sc. and Syahrizal Nasution, M.Si. During the activity, the students received a direct explanation regarding the stages of tofu production, starting from the soybean soaking process, grinding, boiling, soybean extract filtering, to the tofu making process.

At Pak Tikno’s tofu industry, the students learned about the production of various types of tofu, such as white tofu and brown tofu, which have different characteristics and processing methods. In addition, the participants were also introduced to the processing of other soybean-based derivative products, namely tempe, which is also produced there.

Interestingly, the students also learned about the concept of production waste utilization in supporting the zero waste principle in the food industry. The tofu waste produced from the production process is not simply discarded, but is reused as a raw material for making oncom. This is a real example of integrated waste processing that is economically valuable and environmentally friendly.

Through this activity, it is hoped that the students can understand the application of food technology directly in industry, and also increase insight into the diversification of traditional food products and the management of production waste. This industrial visit is also a means of exchanging experience and knowledge between students of ITERA and KMITL in the field of soybean-based food processing.
