Food Technology Itera Empowers Women Inmates at Bandar Lampung Prison through Chicken Nugget Production Training

Food Technology Study Program, Institut Teknologi Sumatera (Itera), conducted the Community Service activity through the PPKK scheme in 2026 “Valuable Fish, Independent Citizens: Production and Packaging of Frozen Food Nuggets” on Monday, 26 October 2026, at the Women’s Class IIA Prison in Bandar Lampung.

This activity highlights the utilization of catfish as a raw material for a food processing product in the form of frozen nuggets (frozen food). Catfish was chosen because it has good protein content and has the potential to be processed into practical, diverse, and added-value products. Through processing into nuggets, catfish is expected to have broader appeal as a food product that can be consumed daily or developed into a business opportunity.

In this activity, the beneficiaries were introduced to the catfish nugget production process, starting from raw material processing to product packaging. Packaging and storage aspects are also an important part of frozen food product development, because they are related to product protection, quality assurance, and ease of distribution and marketing. The application of food technology knowledge is expected to help the community understand the importance of proper processing, sanitation, and product handling to produce quality and safe food for consumption.

More than just a food processing training, this activity is an empowerment effort to equip the beneficiaries with practical skills that have the potential to be used as a provision of independence after completing the mentoring period. Through this activity, Food Technology Itera strives to present the application of knowledge and technology that is not only product-oriented, but also provides social benefits and opens opportunities for food-based business development.
