Lecturers of the Food Technology Study Program (PSTP) visited the Keripik Darsa (Dari Desa) MSME in Labuhan Ratu IV, Labuhan Ratu District, East Lampung. Keripik Darsa is an MSME that produces various kinds of fruit chips, including jackfruit, pineapple, and banana. The visit was held on 7 November 2020 to observe the production process of these various chips. The products of the MSME, led by Alis Saputra, S.P., have been distributed to various regions on the islands of Sumatra and Java. “The crispy, sweet, and non-greasy taste makes many people like Darsa chips,” said Alis.
Fruit chips are popular because of the chip processing method using vacuum frying equipment. This equipment is a type of fryer based on the principle of balancing temperature and vacuum pressure. The vacuum pressure below 1 Atm used in this equipment can produce fruit chips with highly favored sensory characteristics.
Through this visit, it is hoped that cooperation will be established between the MSME and PSTP, both in research and community service. “Hopefully in the future we can work together to solve existing problems, whether through research or community service schemes,” said Dea Tio Mareta, S.T.P.,M.Sc, one of the PSTP lecturers.
